Sous vide beets

Vegetables need a much hotter bath than meat: at 85 °C the pectin that holds beets firm breaks down, so they turn tender while keeping all their flavour and colour in the bag. Make a batch, chill it, and use it all week.

Step by step

  1. Preheat the bath

    • Set the circulator to 85 °C.
    • Prep while it heats.

    • Bag the beets in a single layer with (thyme and garlic optional):
      • olive oil 1 tbsp
      • salt ½ tsp
      • vinegar (red wine, balsamic or rice) 1 tsp
      • thyme 2 sprigs
      • garlic 1 clove
    • Seal with the vacuum sealer.

    Clip the bag to the side and weigh it down — vegetables float, and the bag can puff up as it cooks.

    To store, drop the sealed bag into ice water for 15–20 minutes, then refrigerate unopened and use within 5 days.
