Drunken noodles (pad kee mao)

Thai street food, said to be best with an ice-cold beer. The cooking takes about six minutes: garlic and chilli, onion, chicken, then the noodles and sauce, and the basil goes in off the heat. For a milder, sesame-and-ginger plate, see garlic–ginger chicken noodles.

    2Prep and mix the sauce

    • Mince the garlic; deseed and very finely chop the chillies.
    • Slice the onion; cut the chicken into bite-size pieces and the green onions into 3 cm lengths.
    • Mix the sauce in a small bowl:
      • oyster sauce 3 tbsp
      • light soy sauce 1½ tbsp
      • dark soy sauce 1½ tbsp
      • sugar 2 tsp
      • water 1 tbsp
