Garlic–ginger chicken noodles
The version closest to your existing ingredients, with mushrooms, greens and a sesame finish. Uses 100 g dried rice noodles and 150 g raw chicken.

- Slice the chicken thinly.
- Slice the mushrooms.
- Chop the bok choy, keeping stems and leaves separate.
- Finely chop garlic and ginger; slice the spring onion, keeping whites and greens separate.
- Mix the sauce in a small bowl:
- soy sauce 2¼ tsp
- oyster sauce 2¼ tsp
- mirin 1½ tsp
- sake 1½ tsp
- rice vinegar 1 tsp
- water 1½ tbsp
- black or white pepper a pinch

- Brown the chicken and cook through, then transfer to a clean plate.
